Paolo’s task is curing meat after butchering. In other words, he is a technician ,even though the word ‘technician’ is not suitable for a social job as the profession of the pork-butcher, in Venetian language “massoin”.
Paolo oversees the choice and curing of the meat, as well as the processing and preparation of products. Aging and check of meat and maintenance of refrigerating rooms are his tasks.
Paolo is putting together the experience and skills that will lead Casa Cason toward the future, yet preserving the wise rules brought down to him first of all by his grandfather.
